Our evening activity today, along with making pea and mint risotto (yum!), was making delicious white chocolate and cranberry cookies. We followed a really simple recipe, which we use over and over again changing the flavour (Green and Blacks dark chocolate cookies are also great), and it only takes about 10-15 mins to prepare depending on your speed and about 12-15 minutes in the oven.
Here’s the recipe:
Preheat oven to 180 degrees
Cream 250g (one pack) of butter and mix in 140g of caster sugar.
Add one egg yolk and two teaspoons of vanilla extract.
Then sift in 300g of plain flour (you can change the ratio to 250g of flour and 50g of cocoa of you wish to make chocolate cookies)
Then add your extras (in this case a large bar of Belgian white chocolate and a few large handfuls of dried cranberries)
Make into about 12 balls and flatten slightly on a baking tray.
Bake for about 12 minutes and allow to stand briefly before scoffing the lot!
They are so easy and so yummy, we’ll be eating these yummy baked goods for days. Enjoy!
