Tomato, Mozzarella and Basil Tarts

DSC_0243I can’t think of anything that’s easier to cook than these tarts (possibly beans on toast, but that doesn’t look as fancy). They’re something nice to cook if friends are coming over for dinner, but are so quick and easy (and cheap!) that you won’t be left slaving away in the kitchen.


  • Puff pastry (you could make your own, but I find the ready made roll out pastry is just as good, just as cheap and far less effort)
  • Tomatoes
  • Basil
  • Mozzarella
  • Garlic
  • Salt and Pepper

These tarts are fairly self-explanatory. Cut out your desired shape in the pastry, and add your sliced ingredients onto the top. You can pretty much add any topping you like, pesto works really well as a base, roasted vegetables are always tasty and I always use some sort of cheese which melts and holds it all together. I’m vegetarian, so I wouldn’t add any meat, but things like ham and bacon can easily be added.

Put a little greaseproof paper on a baking tray (to catch all the oozing cheese and minimise washing up) and pop the tarts in the oven for about 20 minutes, or ’til the pastry is golden brown and the cheese is sizzling.


Enjoy with salad, roasted vegetables, new potatoes or just simply on their own. Yum yum.
